Homemade Mozzarella Sticks

Ingredients

12 sticks of string cheese in your choice of cheese, you can also use low sodium

1 large egg

2 Tbsp flour

5 Tbsp bread crumbs

2 Tbsp parmesan cheese

a dollop of olive oil or cooking spray

Directions

Cut the cheese sticks in half, making 24 slices, then freeze the slices in the freezer until completely frozen. Preheat oven to 400 degrees

Beat the egg in a small bowl. Use a separate bowl to combine the bread crumbs and Parmesan cheese

To bread cheese sticks, dip the frozen cheese sticks into the flour, then into the egg, then into the bread crumb mixture.

Once all the 24 sticks are coated place them on a baking sheet covered with aluminum foil coated with a few drops of olive oil or sprayed with cooking spray ( this will keep clean up easy and keep the sticks from sticking to the pan)

Bake in the oven for about 4 minutes or until crisp. They need to be watched closely so they don’t melt completely! Dip in some warm marinara or just enjoy plain!

Buffalo Chicken Quesadillas

  Since football season has started, I thought I would post this little gem of a recipe. I was   craving hot wings one day but no chicken wings in the house, so I came up with this for left   over chicken. It is a great way to use left over chicken.

Ingredients:

Left over chicken- I use 1 large piece per quesadilla.
2 ounces of Franks hot sauce or wing sauce.- You can use your favorite brand.
1 medium handful of Mexican cheese or any type of cheese you like
2 tortillas- flour

Directions:

Cut up left over chicken into bite size pieces, add chicken to hot sauce and let sit for at least 5 minutes. This is really great if you want to make a larger batch and leave it in the refrigerator for a later date.

Heat stove top to medium-high using a non-stick 8-inch or larger skillet. If you have a pan without sides, even better.

Put one flour tortilla in the skillet, add chicken and cheese on top and cover with the second flour tortilla. Let cook on first side until crispy about 2 minutes or so.

Flip over carefully to avoid losing the mixture inside, let cook on second side for about 2 more minutes. Since stove tops vary this make take longer or shorter depending on your stove. When brown on both sides, remove from pan to plate and cut into quarters. Serve with ranch or blue cheese dressing.

**** Quesadillas are wonderful items to make with different kinds of fillings, so play with them and mix it up!**** If you are making this for game day, be sure to make plenty!! Folks will love them and want more!

Buffalo Chicken Dip

I have made this recipe once. It was soooo good! It is great for pot luck parties or for game day! So easy to make. I have to admit that this recipe is not mine, I got it off the QVC page believe it or not. Just know that this dip IS highly addictive and will make a great meal. I personally used the Chickn in a Biscut crackers to eat this, my Army Boy used tortilla chips, but  a word of advice there, if using tortilla chips, use the thicker ones because the thin ones will just break off because this dip is hearty. It can also be served hot or cold. The whole recipe makes A LOT so if  it is just you and a friend or two, I would cut it in half.

Ingredients:

2 store bought rotisserie chickens, skinned and finely shredded

3 (8 ounce) packages of cream cheese softened

3/4 cup ranch dressing

3/4 cup blue cheese dressing

1 cup buffalo wing sauce

3 cups Monterey Jack cheese, shredded

Any of your favorites for snacking, chips, pretzels, crackers, raw veggies for dipping

Directions:

Preheat oven to 350 degrees

Beat the cream cheese, ranch dressing, blue cheese dressing, and hot sauce until creamy and fully combined. Fold in the shredded chicken and 1 1/2 cups of the shredded cheese.

Spread the mixture into the 3.5 quart dish and bake for 25 minutes

Remove the dip from the oven and sprinkle the rest of the cheese on top. Bake for another 20 minutes, or until it is hot and bubbly.

Allow the dip to cool for 10 minutes, then serve with your snack foods.

Tawnya’s Tips:

Since all ovens are different, keep an eye on the dip while it is in the oven, if it is looking done before the recipe times, take it out and check it. Also, I used my stand mixer to combine this together, since I don’t have a hand held mixer. DO let it sit for 10 minutes, I know it is hard!! I also mixed it up a little bit before serving to avoid that impenetrable cheese top.

Cheesy Spinach Dip (Original Post 8/23/07)

This is an amazing dip for any party or even for a rainy day at home. It is easy to make and your friends will think you spend hours making this!

Ingredients:
1 pkg (10 oz) frozen chopped spinach, thawed, drained
3/4 C. grated parmesan cheese
3/4 C. Mayonnaise
1 C Mozzarella cheese, shredded
1/2 tsp garlic powder
Instructions:
Preheat oven to 350. Mix all ingredients until well blended. Spoon into a 9 inch pie plate. Bake 20 minutes or until heated through. Serve with your favorite crackers or chips.

Tawnya’s Pizza Dip (Original Post 8/25/07)

I know that when you look at this recipe, it does not look like it would all go together, but I swear it does! It is so good and it makes a lot! Use your favorite chip or cracker to dip! Again, you can add to this to suit your tastes.

Ingredients:

1 8 oz block of cream cheese, softened at room temp.
1 16 oz container of sour cream
1 16 oz jar of pizza sauce
1 package of pepperoni
1 package (2 cups) of mozzarella cheese or the Italian Blend or Pizza blend
Italian seasoning

Directions:

Spread cream cheese block on bottom of 9 inch pie plate. Spread sour cream on top of cream cheese. Add pizza sauce on top and spread all over. Put pepperoni on top of ingredients like a pizza. Add cheese. Sprinkle Italian seasoning on top as much as you like. Bake in a 350 degree oven for 30 minutes until heated through and cheese is melted and bubbly. Enjoy with favorite chip, cracker, veggie. Whatever.
